Tarrazú is a highland region located south of San José, Costa Rica’s capital. The area is part of the country's “Los Santos” zone, named for the towns of San Marcos, Santa María, and San Pablo.
Coffee from this region is grown at elevations of 4,000–6,000 feet, which puts it in the "strictly high grown" category. That high altitude is a big deal—it leads to slower bean development, which means denser beans with more concentrated flavors.
